Bibingka (Rice cake)




Bibingka or rice cake is one of the delicacies in Mindanao especially during November 1 and 2....Bibingka is made of grind rice, some others are using flour.

Ingredients
  1. 3 Cups rice flour
  2. 11/2 Tablespoon baking powder
  3. 1 Cup brown sugar
  4. 3 Eggs
  5. 3 Cups coconut milk
  6. 1 1/2 Teaspoon vanilla extract          
  7. 1 Teaspoon salt
Instructions
  1. In a large mixing bowl combine flour, baking powder,salt and brown sugar. Whisk together and set aside.
  2. Put eggs in a separate bowl, add vanilla extract and coconut milk, beat with a whisk.
  3. Pour the flour mixture over the coconut milk mixture. Fold with a whisk until smooth and free of lumps.
  4. Pour batter into the banana leaf lined baking mould or pan.
  5. Bake in a pre-heated oven at 400°F for 30 minutes.

Chocolate Moron



Chocolate Moron is a variety of suman, smoother than the ordinary suman and made of a ground rice, which is known as "Malagkit" in filipino and mix with cocoa.

Ingredients

  • 1/2 cup malagkit (glutinous) rice
  • 1-1/2 cup ordinary rice
  • 3/4 cup coconut milk
  • 1-1/2 cup sugar
  • 1 cup chocolate or cocoa
  • banana leaves, wilted over fire
  • melted butter
  • string

Cooking Measurements

  1. Soak over night the malagkit and ordinary rice. Grind the following day.
  2. Soak both ground rice in coconut milk until soft. Add sugar and the chocolate.
  3. Cook over low fire, constantly stirring until thick. Set aside and cool.
  4. Prepare the leaves for wrapping by heating by over low fire. Brush the leaves with butter.
  5. Put 2 tbsp. of the mixture in every wrap. Tie with string. Repeat until all are wrapped.
  6. Cook/steam for half an hour in a double boiler container or a steamer.
